Why this works for bakeries

Bakeries share the café pattern: low ticket, high frequency, decided by convenience, but with a sharper daily rush, which makes enrolment speed the single most important feature.

A bakery's loyalty problem is almost entirely operational. The product already earns repeat custom; the difficulty is capturing who those repeat customers are while serving forty people in twenty minutes.

This is the clearest case for enrolling by phone number rather than a QR code. At peak the customer has a wallet in one hand and a bag in the other. Anything that requires them to produce a phone simply will not happen, and enrolment quietly falls to near zero.

Weekend-only customers are a distinct pattern and should not be judged against a weekday threshold. Someone who comes every Saturday has a seven-day gap, so treat three missed weekends as lapsed rather than applying a flat three-week rule.

They are also the group most worth messaging, because their visit is a deliberate trip rather than a convenience stop. A Friday notification reaches them while the weekend is still being planned.

What about seasonal peaks?

Bakeries have sharper seasonal swings than most counter businesses, and a card that fills quickly during a festive period can distort the economics if the threshold was set for normal trade. Keep the threshold, and use the peak to enrol: a queue of once-a-year customers is the cheapest enrolment opportunity you will get all year.
